After indulging in the real thing over the Thanksgiving holiday, I had to come up with a healthier substitute for pumpkin pie. This way I can still enjoy some deliciousness without gaining unwanted pounds!
Ingredients
3/4 cup canned pumpkin puree
3/4 cup plain Greek yogurt
2 tsp natural maple syrup
~1 tsp cinnamon + 1/2 tsp nutmeg -OR- 1 to 1.5 tsp pumpkin pie spice
Mix all ingredients together. You can add a splash of unsweetened, vanilla almond milk to change the consistency to your liking. Makes 2 servings. Enjoy!
21 Day Fix: a little less than 1/2 veggie/green, 1/2 protein/red, 1 tsp
