Protein Pancakes (fruit + protein only)


2 eggs, beaten

1/2 ripe banana

1/2 tsp vanilla

1/4 teaspoon baking powder

1/4 scoop vanilla protein powder (I use vegan Shakeology)

1/2 to 1 tbs almond flour (to thicken batter only if needed)


  1. Mash banana with a fork well and try to eliminate most lumps (Tip: microwave banana for 20 seconds to soften, especially if it is not really ripe)
  2. Beat eggs in separate bowl and add to banana mash
  3. Add all other ingredients and whisk until most lumps are gone
  4. Heat frying pan to medium low heat and use coconut oil to grease pan
  5. Scoop about 1/3 cup of batter onto pan
  6. Cook on medium low heat until bubbles form (about 2-3 minutes)
  7. Flip and cook other side till golden brown (about 2-3 minutes)
  8. Serve with maple syrup, honey or peanut butter and top with berries


Portion Fix Containers: 1 red/protein, 1 purple/fruit, negligible almond flour that I don’t count 🙂 but I do count the PB I usually use teaspoon for teaspoon!
