Here is a pudding recipe approved for The 80 Day Obsession! I usually save this as a dessert for my last meal of the day which is 1 red, 1 green, 1 yellow, 1 orange, and 1 tsp. I will cook a protein and a veggie for my meal and then this yummy concoction is my dessert (1 yellow, 1 orange, 1 tsp!! ENJOY…maybe even in your jammies like I did!
1/4 cup fast cook oats
1/2 cup unsweetened almond or cashew milk
1 orange container chia seeds
1/4 tsp vanilla
1/2 packet Stevia
1/2 tsp all natural peanut butter
Add all ingredients to a mason jar or sealable tupperware you can shake. Mix/shake well and refrigerate for 8 hours or overnight. The chia seeds swell and soften to make a pudding texture like tapioca.
